Crepe Expectations
Low-fat, fluffy and delicious (if we do say so ourselves) this healthy pancake recipe is the staple, basic process. You can go on to spice or sweeten it up depending on your taste!
Ingredients For Pancakes (makes 6)
- 2 cups whole wheat flour
- 4 1/2 tsp baking powder
- Pinch of salt
- 2 large eggs
- 2 cups skimmed milk
- Cooking spray
If you’re making sweet pancakes, add 2 tsp sugar and 2 tsp vanilla extract, or why not try a sprinkling of cinnamon?
TOP TIP! If you’re cooking pancakes for the kids, try white whole wheat flour for a more traditional looking pancake!
How To Make Pancakes
Mix all of the dry ingredients for pancakes in a large bowl. Add in the wet ingredients mix well with a spoon until there are no more dry spots; don’t over-mix as this can make your batter tough and chewy.
Heat a large pan on medium heat. Lightly spray oil to coat and pour 1/6 of pancake batter. When the mixture starts to bubble, add your fruit/choc chips etc if you wish. As the edges begin to set, flip the pancake. Once it’s set, serve up!
Fresh and warm from the pan is the best way to eat your pancakes, but you can also freeze them ready for a quick breakfast!
Whilst we’re fairly firm believers that pancakes with lemon juice make the perfect pairing, it’s always fun to try out your toppings – add fresh blueberries, walnut pieces, sliced banana, strawberries or a little maple syrup to your list of ingredients for pancakes that are not only super healthy, but taste divine!
